Au programme

Class will begin at 10:00 am. After introductions and offer of coffee, water, & tea we show everyone where the restrooms are! I start with an explanation and overview of how cheese is made. I then explain the types of cheeses that we will be making that particular day, and give them an overview of how that will be done. I explain that due to time restraints, we are going to be making "fresh" cheeses, rather than aged cheeses. I pass out a supply list for home cheese making, and the recipes of each cheese we will be preparing. (These handouts are for the students to take home.) Then we begin making the cheeses from our very fresh goat milk. It is very hands on. I have people stirring milk, adding the various additives, checking the temperature, and cutting and stirring the curds. After the cheeses are finished, we are able to sample them with crackers and sometimes with other items such as figs from our garden, or tomatoes and basil. I then portion out generous samples of the cheese in containers and give them to the students to take home. NOTE: We milk our goats at 9:00am. If you are able to visit us and or stay over night in our lodge, you are welcome to watch and try the milking.
Other things to note
We use raw cow's milk during the winter, as we are not milking the goats.
We are using fresh raw goat's milk and require a signed herd share agreement if students wish to take the cheese home or to buy additional cheeses.

I own the Mountain Goat Lodge B&B and Dairy Goat Farm. I have been making cheese for 10 years. For the past 8 years I have taught cheese making classes once a week. I make cheese and yogurt daily. I sell my products at a local farm stand as part of a CSA. I worked for a major Dairy and learned the importance of sanitary milk handling. I owned a Goat Sanctuary in WA for five years. Destinations

We will be in the dining room and kitchen area. If guests are interested they will have the opportunity to interact with all of our pet dairy goats. Guests are also welcome to hike on our 45 minute walking trail after class is finished.

Interesting, fun, educational — from hanging out with goats to tasting cheese and experiencing Gina’s passion for animals. Now it will continue as I work on making cheese at home.

What a fantastic experience. I am so glad we decided to book this. Gina is a definite master cheese maker. Class is held in a comfortable setting and very casual. Very hands on. A perfect way to spend our morning. Wonderful B&B also, will need to stay there on our next trip.

SUPER COOL EXPERIENCE I loved this class! Super chill & comfortable lodge with dogs & goats hanging around, Dogs are always a bonus for me!! :) not to mention the gracious & welcoming hosts! The cheese making class itself was incredibly educational & fun! & the cheese at the end was fantastic! 10/10 would & will recommend to friends & other interested in cheese making! Definitely will be trying to make my own cheese at home! Thank you Gina!!

The cheese class was fun and full of information, but the class was less hands on than expected. We watched her make cheese, and then picked up some samples the next day. This was not a hands on class. The cheese was good though.

The cheese making class was really awesome experience. We were able to see the whole process from the start- to milking of the goats to the use of the fresh milk to making the cheese, and to sampling different types of cheese. Gina is very knowledgeable about cheese making and goats and very willing to share her knowledge with others. Another cool feature about this class is you could take home the finished product. We took home the 2 different cheeses that were made during the class. I highly recommend this class. I also will probably take the class again to learn how to make other types of cheese. I also will probably stay at the lodge in the near future. The lodge is amazing and the scenery and animals is awesome.
