With COVID limitations in mind unless it is family or friends of your choice we will only allow this to be a four person class and weather permitting you'll dine outdoors.

Whatever the circumstances Linda will welcome you into their mountain top retreat—which, wherever you look will be a stunning view or a picturesque vignette of pond or barn—and award winning Chef Ted will introduce you to the overall theme of the course which pays homage to Vermont's dairy industry.

Then he will lead a hands-on class where you’ll learn the art of making a soufflé, whether for lunch, brunch, or dinner--whether savory or sweet. Even a fallen soufflé will have its place at your table.

Using mostly organic, regional ingredients that herald mainly from VT farms, Chef Ted will also talk about the history of the ingredients or dish.

You’ll also make and bake pots de créme with a spicy nut topping.

As the soufflé also does, rise to this opportunity to fine-tune your culinary skills with a personalized experience and education. Come whip it up with Chef on his Vermont food odyssey! Recipes included. BYOB.

Repeats regularly on various afternoons but contact us to change to another date, time, or a different class to suit your schedule.

If weather is stormy we can pick you up at the base of our hill. If you are interested in a different class subject, and no one else has booked the same date we'll change the course for your pleasure!

I'm Ted, an award winning chef, living a beautiful lifestyle I'd like to share with you—as well as coach you in a personalized cooking class.

It’s rewarding to offer this from my home using local ingredients, an idea I helped pioneer with my wife, Linda, since '75. We are forerunners in wine pairings & vanguards in Vermont’s farm to table culinary community which champions local products.

My restaurant career began at the age of 5, frying baloney & cooking minute rice on the radiator plus hanging out in the kitchens of my grandmother & restaurateur grandfather.

As adults we wandered through some grand kitchens in France & Italy where my interest in food reignited.

Our last restaurant, Hemingway's, received many accolades including Top 25 R's in America-Food & Wine Magazine & 50 Most Distinguished R's in the US-Condé Nast Traveler.

Also for neighbors we have maple syrup makers, a passionate vigneron, and gardeners, all of whom welcome your visit.

This is a good experience for thoes who want to learn advanced recipes. Make sure you eat something before you go, it's not a huge breakfast. Beyond worth it I would definitely go again.

Our family of six adults thoroughly enjoyed our cooking class with Ted and Linda. They are a great team with years of restaurant experience. Their home is beautiful and we felt very welcome there. Linda set a lovely table for us to enjoy our creations. The food we cooked was just the right level of fancy without being so over complicated that is was a chore. Do remember to BYOB. It's a wonderful meal and experience. I highly recommend it. Our party of six felt like just the right size for the space and the activity.

This was a truly exceptional experience. Ted and Linda are great hosts and teachers who truly love what they are doing. I WILL come back, from Washington State, to take another class from them (or maybe fly them out to the west coast to share with my friends). That is how much we liked their class.

We really enjoyed this experience! Linda and Ted were gracious hosts and taught us to cook a delicious meal that we will replicate at home many times. We enjoyed their beautiful home and property as well.

We had an amazing morning and afternoon learning to cook delicious souffles and apple tarts with Chef Ted and Linda. It was a beautiful fall day so we got to pick our own apples in their beautiful backyard and got to enjoy our meal outside too. Perfect Vermont activity and would highly recommend!

I had a delightfully enjoyable afternoon at the soufflé class and a wonderful delicious lunch after it was cooked. Linda & Ted are warm and welcoming. Ted can answer any of your cooking questions even if they do not relate to the particular recipe you are making. When I go back to Vermont next year during the ski season, I hope to include another cooking experience with them.
