Isle of Skyes only Commerical smokehouse
A tour of the uniquely designed smokehouse is inspired to look like a traditional Scottish building called a cleit. A peat roof and stonewalled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 4 different canapes.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

Destinations

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

Simply superb, even if your not a smoked salmon lover, this is a unique experience, John obviously has a passion for his produce and you can definitely taste it. A must try.

This is one of the best tours I’ve been on. John was amazing host. His knowledge and passion for what he is doing is inspiring. The food was world class and I’d have happily booked another tour just for the food. If your coming to Skye and like fish this is 100% a must book tour. Amazing host amazing food amazing experience.

We weren’t sure what to do on Skye so we booked this experience on a whim and it turned out to be one of the best experiences of the trip! John was very conscious to social distance, everything was very clean and felt safe. John’s story telling of the smoking from the conception of his venture to the actual process was very interesting and impressive! The salmon and various canapés were delicious and we ended up buying more salmon from John’s smokehouse later in the trip! Would definitely recommend! Thanks John!

Had a wonderful time at the Smokehouse tour. John went onto every detail and it was all really interesting. The tasting menu was delicious and the sunshine and otters playing in the water below all added to the magic.

John gives a wonderful insight into artisanal smokery with his unique island setup... His time as a chef at top London restaurants made for a really fantastic tasting experience. Highly recommended!
