One of the iconic sights of Fez, the Chaouwara / Chouara tannery, the largest of the city's three tanneries, is a piece of living history that dates to the 11th century. The stench of the open pits can be a little strong at times, as cow urine and pigeon excrement is used to tan the leather. The dying process is striking to witness, as workers stand almost waist deep in vibrant vats filled with solutions coloured by organic plant dyes and pigments.

Established in 859, the Kairaouine is the spiritual heart of Fez, and, arguably, all Morocco. It is also considered the world's oldest university, though it began as a simple medersa, funded by Fatima Al Fihria, a member of an elite family who emigrated from the Tunisian city of Kairouan. Expanded over the centuries, the Kairaouine is now very large, with a capacity of 20,000. This is hard to grasp on the ground, though, as shops and houses encircle it, disguising its true shape.

Food scene

Serving fantastic Moroccan cuisine with a twist, Dar Roumana is a cozy and intimate restaurant. It is located in a beautifully decorated riad, a large traditional house built around a central courtyard. The menu offers four appetizers, four main courses and four desserts. Although this may be a limited choice, it ensures that all dishes are both cooked exquisitely and are bursting with flavors. The simple, cascading fountain feature here provides a charming focal point for the interior, and there is a large, romantic roof terrace with beautiful panoramic views of the city. Don’t miss the library too, hidden away in a corner and offering a piece of peace among the hustle and bustle of the city. 30 Derb el-Amer, Zqaq Roumane | The Medina, Fes 30110, Morocco, +212 5357-41637
