The focus of this café, as you probably guessed, is the coffee. Roasted here in the Blue Mountains, the coffee has a delicate strength and drinking it is a pleasure, made even more enjoyable knowing the care that has gone into the whole process of making it. The founder of Cassiopeia, Zac Suito, is a bit of a coffee celebrity in the Blue Mountains. He was one of the first in the region to roast his own coffee beans locally, and he holds the bar so high for quality and sustainability of the coffee production process that he’s even visited one of the farms in Panama where he sources coffee beans to make sure quality control at Cassiopeia begins at the farm level.

The spotlight here is shone on quality, ethically sourced coffee from the likes of Reuben Hills. Even the milk used in your cuppa is special — it's sourced from a family-run farm in Dubbo called Little Big Dairy. As well as black, white and filter coffee, there are turmeric, butterscotch and Speculoos (a spiced Dutch biscuit) lattes, PS40 sodas, milkshakes and cold pressed juices, too. The food also focuses on seasonality and quality, with a made-in-house mentality where possible — from the almond and macadamia milk to the liquorice bread. Tuck into plates of beetroot and gin-cured salmon tartine ($19) or slow-cooked pulled brisket on top of a soba noodle salad ($18). If you're looking for something heartier, there are also chocolate pancakes with maple cardamom cream ($17), egg and bacon burgers ($13) and miso pumpkin and bechamel Sonoma toasties ($16).

The Blue Mountains City Council has ensured that any developments within Leura fall into the strict guidelines of the town with heritage colours used throughout. Leura's Natural Wonders The natural wonders of Leura can be discovered via the many walks. A great place to start is Sublime Point Road. Here you will find one of the world’s most spectacular golf courses as well as the popular Fairmont Resort. At the other end of Sublime Point Road is Sublime Point at 900m above sea level, you are certain to stand in awe of the view from this point. At the end of Everglades Avenue is Historic Everglades. Everglades Gardens is owned by the National Trust and is open to the public all year round. Explore the gardens of Everglades to discover sandstone terraces, cool climate trees and shrubs, views of the Jamison Valley, as well as fabulous picnic areas. First constructed in the early 1930s, Everglades demonstrates fine examples of early Australian landscaping designed by Paul Sorensen. The bridge over the Great Western Highway between Wentworth Falls and Leura has been named in honour of Paul Sorensen. The gardens are picture perfect in any season.
