Ok, this one is a little far away from Denver, but if you haven't been to Jackson Hole, you gotta go. Jackson is a beautiful bowl in the midst of the Teton Mountains. World-class skiing, food, hiking, and animal-watching are at your finger tips. We highly recommend a "safari" to have a guide point out all the amazing wildlife in the area.
