Shio—or salt—ramen is very light, but the thing about it is that out of 10 places, only one will be special. This bright, friendly shop does some of the best shio ramen in Tokyo. The owner has a background in French and Italian fine dining and uses his sensibility to blend salt for the stock like a pro. If you go on Friday, the shop serves a special duck shoyu ramen, which is soy sauce-based. It’s one of Tokyo’s best bowls, so be prepared to wait.
