From executive chef Bryce Gilmore (also of Odd Duck), Barley Swine is all about the Texas growing season. Gilmore and his team source products from local farmers and ranchers, utilizing them across the restaurant's two menus — the chef's tasting and the standard a la carte. Due to their seasonal nature, don't count on any offering sticking around for too long, but expect dishes like smoked goat with charred tomato salsa, beans and mesquite tortillas and shiitake dumplings with scrambled egg and grilled summer squash.

This is a bit of a drive, but it's probably our favorite restaurant in Austin. They offer a seasonal tasting menu (it's not cheap), but also have one of the best happy hours around (swine time) most days from 5:00 - 6:30, when you can taste a lot of their new and upcoming dishes for far less.
